Another thing you can do is to put the rudder controls in the front position so the person who sees can steer. I did this on our folding double and my wife *loved* it. We had t go where ever she wanted, which was too close to the rocks for me. I Just became a 'big dumb motor' in the back position. I had to explain to her that the rudder was under too much stress and had to be set in the rear for safety, don't anybody let her in on it.
